Cloud Bakery

Cloud Bakery is the bakery arm of the family behind Bebek Tepi Sawah — the Ubud institution that's been serving Bali's most famous crispy duck since 1999, now 27 restaurants across Indonesia. (Locals call it BTS. Different fandom, comparable devotion.) The same obsession with Indonesian ingredients runs through the pastry counter: Kusamba black sea salt, single-origin Indonesian cacao, Balinese jasmine, and lontar palm syrup tapped from the same tree used for canang sari offerings. It's a deliberate break from the Melbourne-cafe template that dominates Bali — everything here tastes like where it is.
